Taco Bake Casserole Goodness

So Thursday night it was rainy (which doesn't really happen anymore) and freezing (a whole 54 degrees). I thought it was a perfect night for soup and sandwiches... Unfortunately Tbone didn't agree... Dammit! So I had to re-think my whole dinner prep...

I took some Pinterest recipes and tweaked them to fit what I had in the fridge... and I came up with this...

Taco Bake Casserole Goodness

Ok here is what I did.... 

Brown 1-1.5 lbs of ground turkey with a small chopped onion. 
Once browned, mix in a pkg of taco seasoning or seasoning of your choice. 

Spray a 9x9 dish with non-stick spray
Cut 6 flour tortillas in to bite size pieces
Cover the bottom of the pan with 1/2 of the tortilla pieces
Sprinkle 1 cup of shredded cheese over the tortillas
Next layer the cheese with your turkey/onion mixture
Add one can of black beans
Add a layer of sour cream (or greek yogurt)
Add a layer of salsa (I used what I had in the fridge, Archer Farms restaurant style salsa)
Then add another layer of tortilla pieces
and... top with cheese





You could add some green chilis or black olives if you'd like. 

Bake for 30 minutes at 350 degrees. That's it! Super easy! 

This was a huge hit with the family!!! Everyone went back for seconds. 

I am normally a huge recipe follower. Up until recently I would NOT deviate from the recipe I was following... I am coming out of my shell a bit and making up my own things or swapping out ingredients for new ones. So far so good!
